Think of Italian cuisine and the first place that comes to your mind is La Cucina, the Italian kitchen and bar at the Hyatt Regency, Kolkata. Joydip Sur caught up with Chef Maitreya Sen to find out what makes La Cucina a class apart The exclusive experience of dining at La Cucina begins from the moment one steps inside the restaurant. This is where authenticity of Italian cuisine blends with the richness of its contemporary ambience. It is also the place where casual amiability combines with the colours of wood, fire clay tiles, stones, fabric and copper.
Located at the lobby level, the restaurant offers an overall seating capacity for 86 guests. One can choose from a range of group tables for four or six or a private dining room or a chef's table for six. Add to this, a collection of books at La Cucina and it becomes the perfect destination for all diners looking for a stimulating experience for both the palate and the intellect. The food here is avant-garde. Chef Maitreya Sen says, “We can assure you that guests will be spoilt for choices when it comes to authentic Italian cuisine. Fresh imported ingredients, homemade pasta and the wood-fire oven emphasize the element of home-style cooking in a sophisticated dining venue.
”La Cucina also offers an exclusive walk through floor-to-ceiling wine library displaying several bottles of old and new world wines. They offer a wide variety of Italian, Australian, French and American wine among many others. Starting from Brunello di Montalcino, Brancaia Tre and Gevrey Chambertin Louis Jadot to Baron Phillipe De Rothschild Sauternes, Gavi Di Gavi Marchesi Di Barolo and Saint Clair Marlborough Sauvignon Blanc, La Cucina has it all and a lot more. Also available are Italian aperitifs campari, martini, premium whisky and beers. The staff at the restaurant is professionally trained to guide the guests to make informed choices about which wine they could choose. In addition, the place makes all Sunday afternoons special with their ‘Pranzo Di Domenica’, an exclusive Sunday lunch serving antipasti and dolci buffet, along with pasta, risotto, vegetarian and non-vegetarian main course served directly from the pan to the plate. The restaurant also plays host to regular promotional events with Italian chefs from different parts of Italy like Tuscany, Sicily, Florence and Venice visiting the restaurant and cooking up a storm for the guests.
Chef's recommendation:
(1) Carpaccio di manzo co parmigiano e aceto balsamico (thin slices of marinated raw beef with parmesan and balsamic vinegar)
(2) Caprese (slices of tomato and bocconcini cheese served with balsamic reduction and extra virgin olive oil)
(3) Asparagi alla parmigiana con funghi misti (green imported asparagus served with butter, lemon, parmesan cheese and salted mushroom)
(4) Caciucco alla pugliese (seafood soup made with seafood bisque and prawn, mussel, bekti and flavoured with home grown basil)
(5) Agnalotti di ricotta e pomodoro secchi con salsa al gorgonzola (sun dried tomato and ricotta ravioli served with gorgonzola sauce)
(6) Rissoto ai funghi con olio at tartufo (Arborio rice cooked with mushroom and flavoured with porcini powder and truffle oil)
(7) Grigliata di pesce piatto di spaghetti con agilo olio peperoncino (mixed seafood platter which includes lobster, calamari, bekti and tiger prawn served with spaghetti with chilli flakes and garlic)
(8) Grigliata di manzo con tortino di palate verdure grigliate e jus vino di porto (mixed grill meat platter consisting of chicken breast, lamb chop, pork roulade and beef medallion served with baked potato, sauteed spinach and roasted provincial tomato)
(9) Pizza parma (pizza with tomato, mozzarella, parma ham and parmesan cheese)
(10) Tortino al ciaccolato caldo fondente con gelato vanigila (melting chocolate tart served with home made vanilla ice-cream)

Italian Pranzo (Sunday buffet):Rs 2,200 per person (with wine), Rs 1,800 per person (without wine)
• Mashed potato with cream, parsley, salt and pepper
• Keep it aside
• Make the prawn salsa with onion, garlic and chopped prawn – saute
• Cool it and add Tabasco sauce, chop pineapple and seasonings
• Marinate the prawn with salt, pepper and lime juice
• Grill the prawn on hot plate
• Make the sauce with red roasted red bell pepper puree add cream and seasonings
• With the help of piping bag place the potato on the plate, place the prawn salsa on top of mashed potato
• Once the prawn is grilled arrange the prawns over the salsa
• Pour the roasted bell pepper sauce on top
• You can use the prawn heads for decoration
Chinese Fish in Fragrant SpiceIngredients • Betki – 250 gm
• Sesame oil – 1tsp
• Ginger and garlic paste – 1tsp
• Onion paste – 4tsp
• Fish sauce – 1tsp
• Lime juice – 2tsp
• Sesame seed – pinch
• Sugar – pinch
• Salt – to taste• Pepper to taste
• Green banana leaf
• Oil – to fry
• Make a paste of onion, garlic, ginger, sesame oil, sesame seed, fish sauce, lime juice and seasonings
• Marinate the thin slice of fish with the above paste
• Allow to cool inside the freezer• Wrap the marinated fish with banana leaf
• Heat oil and shallow fry the fish on both sides in slow fire
• It can be served with steamed rice or noodles
